Bishop's Stortford was an ancient settlement originally known by the Saxons as 'Esterteford'. It assumed its current name when the castle was sold to the Bishop of London in the 11th century. It became an important market town, boasting fairs, festivals and its very own 'dragon'. The canalisation of the Stort in the late 18th century heralded an era of expansion. Review:
